Zürcher Geschnetzeltes is a classic Swiss dish from Zurich. It traditionally consists of thinly sliced veal cooked in a creamy white wine sauce with mushrooms.

Ingredients
400 g veal fillet (thinly sliced)
2 tbsp butter
500 g mushrooms (thinly sliced)
1 small onion (finely chopped)
1 clove of garlic (finely chopped)
125 ml dry white wine
250 ml cream
125 ml beef stock
1 tbsp cornflour
Salt and pepper to taste
Fresh parsley (finely chopped)
Directions
Heat the butter in a pan and sear the veal in it until it is lightly browned. Remove the meat from the pan and set aside.
In the same pan, sauté the onion and garlic until soft.
Add the mushrooms and fry until golden brown.
Deglaze with white wine and bring to the boil briefly.
Add the cream and stock and stir well.
Dissolve the cornstarch in a little water and stir into the sauce to thicken.
Return the meat to the pan and heat briefly. Season to taste with salt and pepper.
Sprinkle with fresh parsley and serve.
