Schwäbische Linsen mit Spätzle und Saitenwürstchen is a traditional dish from the Swabian region of Germany. It’s a hearty and comforting meal that combines lentils, homemade egg noodles (Spätzle), and sausages (Saitenwürstchen).
Ingredients
450 gr Lentil
50 gr onion
50 gr leeks
50 gr carrots
50 gr celery root
120 gr bacon
2 cups vegetable broth
1/4 tsp agar agar
salt and pepper, to taste
1 tsp muskat
2 tbsp vinegar
2 tbsp olive oil
Directions
First sauté the diced onion, then the vegetables, but without the potato. Sauté the bacon, then add the lentils (they can be soaked lentils, but they don't have to be).
Now pour in the broth and cook for about 15 minutes for soaked lentils, correspondingly longer for dried lentils (most lentils on offer can be cooked without soaking).
After about 8 minutes, add the grated potato. When the lentils are cooked, season with the spices and vinegar.
Heat the sausages in hot water.
Heat the spaetzle according to the instructions on the package or make your own during the cooking time of the lentils.
Serve the lentils with the sausages and spaetzle.
